Lemon Lime Jello Salad

This salad is often referred to as the “Green & Yellow Salad” in our house.  It is not everyone’s favourite, but some love it!  I brought this salad to our Thanksgiving gathering tonight, and only a serving or two was left!

Again, the younger crowd had never seen a Jello Mold…  But, every North American feast needs Jello! 😉  I omitted the Olives on 1 half, and even a lot of Grandma’s sons do not remember Olives in her ‘Green & Yellow Salad’.  Truthfully, the salads are kind of fun – I may start making more!

Green & Yellow Salad (Lemon Lime)

Top Layer
  • 1 Lemon Jello
  • 1 cup hot water
  • 8 oz Cottage cheese
  • 1/2 pint of whipping cream
Bottom Layer
  • 1 Lime Jello
  • 1 cup hot water
  • 1/3 cup chopped walnuts
  • 1/3 cup chopped olives
  • 1 small tin crushed pineapple

Top Layer instructions:

  1. Mix the jello & water and let set partially (approx 30min-1hr depending on how hot your water was).
  2. Fold in cottage cheese & whipping cream.  Put in ring mold.

Bottom Layer instructions:

  1. Mix the jello & water and let set partially. (Do this the same time as the top layer)
  2. Fold in walnuts, olives & pineapple.  Put in ring mold on top of yellow layer.
  3. Refrigerate for at least an additional hour.
