Rhubarb Crumble

crumble_inDishThis is a quick crowd pleaser! Perfect cold, warm, or with ice cream on the side! An easy go-to recipe similar to Apple Crisp but with a crumb base as well as a topping. Depending on the season – you could certainly mix this up with other fruits. Just lessen the sugar in the sauce!

Rhubarb Crumble

  • 4 cups diced rhubarb

Crumble mixture:

  • 1 cup all-purpose Flour
  • 3/4 cup regular rolled oats (not instant)
  • 1 cup packed brown sugar
  • 1 teaspoon salt
  • 1 teaspoon cinnamon (more if desired)
  • 1/2 cup melted butter

Sauce:

  • 1 cup Sugar
  • 1 tablespoon cornstarch
  • 1 teaspoon vanilla extract
  1. Mix the crumble mixture together and firmly press 1/2 of the mixture into a buttered 9″ pan.
  2. Spread rhubarb over top.
  3. Mix sauce ingredients with 1 cup of water in a saucepan.
  4. Cook sauce on medium until thick and clear. Pour over rhubarb.
  5. Sprinkle remaining crumbs on top.
  6. Bake at 350F for 1 hour or until golden brown and bubbly.
TIP: When using this recipe for other fruits, lessen or eliminate the Sauce.
