Rice Krispies Peanut Clusters

riceKrispies_closeupMmmm!!  I don’t think I’ve made anything with Rice Krispies that isn’t chewy from marshmallows or peanut butter!!  These would also be great easter “nests”!  Add 3 little Jelly Bellies or add 1 mini egg to the center of each, and you would have Easter Bunny nests.

These are so delicious and simple!!  When this recipe was created- someone was thinking straight!! Only 1 measuring cup is needed; and the pot 🙂

The recipe indicates that you can plop them on wax paper like Haystacks (recommended) or put them in a pan like traditional Rice Krispies and cut once they are cooled slightly.  Due to a crying child; I started out with haystacks, and ended up dumping the rest in my 8×8 baking pan.  Since there is no marshmallows, these turn hard (like a chocolate bar) – so cutting was not simple!  The haystacks on the other hand were a great size & perfect treat!! I offered a plate of the goodies to my dad & he recognized them instantly!  Any other Hood ‘boys’ recognize them??

Rice Krispies Peanut Clusters

  • 1 cup semi sweet chocolate chips
  • 1 cup butterscotch chips
  • 3 cups Rice Krispies
  • 1 cup salted peanuts
  1. Melt chocolate & butterscotch in a large pot.
  2. Remove from heat and add Rice Krispies and peanuts.
  3. Drop on waxed paper. They do not need to be pressed into clumps; they will stick once cooled.
  4. Makes about 5 dozen.
TIP: Mixture may also be pressed into a 9″x9″ pan.  Cool to room temperature than slice into 1″ squares. Do not slice cold.
