Bean Salad

I learned something new today!  Capsicum is a fancy word for Bell Peppers!  Wish I knew that before I headed to the grocery store for ingredients 🙂

Tonight, while the baby grumbled next to me in his high chair, I made Grandma’s bean salad.  Don’t think I’ve ever had bean salad with French dressing, but I’m excited to let it “marinate” awhile and try it out! At first taste it has a more mild flavor than the strong Vinegar flavors of most bean salads. It’s quite nice!

Celery   Beans

Bean Salad

  • 310 ml Can of Corn
  • 310 ml can of lima beans
  • 1 1/2 cups of cut bell peppers
  • 310 ml Kidney beans can
  • 2 x 450 ml can three bean mix
  • 2 x 310 ml can of chick peas
  • 2 sticks celery, chopped
  • 1 small/medium onion – chopped
  • 1/3 cup chopped parsley
  • 1/4 cup fresh mint
  • 2/3 cup french dressing

Mix everything in a large bowl and refrigerate until ready to serve.
Tip: Drain the cans of beans before adding to the bowl.
