Flavour burst!!\u00a0 Talk about great color, flavor & just Delicious!\u00a0This bread should really be called “Cranberry Orange Peel Raisin Nut\u00a0Bread”… But I can see how that could be a bit excessive!

This tasted great!\u00a0 Mine turned out a bit crumbly; but honestly- I’m\u00a0not a very accurate measurer, and this recipe could be a bit\u00a0particular.\u00a0 Nonetheless; it tasted great! It needs no jam or butter!<\/p>\n

Update: \u00a0The next day it sliced perfectly. \u00a0I guess I was a bit anxious!<\/h6>\n

Doesn’t it look good too?\u00a0 Reminds me of a Tim Horton’s Fruit Explosion muffin. I should start making loaf pan breads more often!<\/p>\n

Cranberry Bread<\/strong><\/h4>\n
    \n
  • 1\/4 cup margarine<\/li>\n
  • 1 egg<\/li>\n
  • 1 cup sugar<\/li>\n
  • 3\/4 cup orange juice<\/li>\n
  • 2 cups flour<\/li>\n
  • 1 1\/2 teaspoon salt<\/li>\n
  • 1\/2 teaspoon baking soda<\/li>\n
  • 1 1\/2 teaspoon baking powder<\/li>\n
  • 1 teaspoon grated orange peel<\/li>\n
  • 1 1\/2 cups light raisins<\/li>\n
  • 1 1\/2 cups nuts, chopped<\/li>\n
  • 1 1\/2 cups fresh or frozen cranberries, chopped<\/li>\n<\/ul>\n
    Directions:<\/strong><\/h6>\n

    1. Mix margarine, egg, sugar together.<\/li>\n
    2. Add orange juice, mix.\u00a0 <\/span><\/li>\n
    3. Then add dry ingredients (flour, salt, baking soda, baking powder), mix.\u00a0 <\/span><\/li>\n
    4. Stir in orange peel, nuts, raisins & cranberries.\u00a0 <\/span><\/li>\n
    5. Scoop mixture into a loaf pan. Bake at 350 for 1 hr and 10 minutes or until centre comes out clean when poked with a toothpick.<\/li>\n<\/ol>\n<\/div>\n
